Roasted Tomatillo Salsa

Ingredients:

  • 10 tomatillos, husk removed and rinsed 

  • 2 large garlic cloves, unpeeled

  • 1/4 small white onion

  • 2-3 serranos; this will depend on how spicy you want the salsa

  • 1/3 c. cilantro

  • Salt, to taste

Instructions:

  1. Start by heating a cast iron or heavy pan on high heat. Place the tomatillos, onion, unpeeled garlic, and serranos on the pan and sear until chard on all sides, flipping when necessary. Remove from heat. Allow everything to come to room temperature for at least 45 minutes.

  2. Transfer everything to the blender, (don’t forget to remove the skin from the garlic cloves) including cilantro and salt. Blend until desired texture and taste, and adjust seasoning to your liking. 

Notes

The texture will depend on what you will be serving the salsa with; I prefer a thinner, smoother salsa for tacos. For a dip, I like a chunkier texture.
