Guacamole

Ingredients:

  • 2 small ripe avocados

  • 1-2 serranos, finely chopped; this will depend on how spicy you would like the guacamole

  • 2-3 Tbsp. red onion, finely chopped

  • Juice of 1 lime

  • 1/4 c. cilantro, finely chopped

  • Salt, to taste

Instructions:

  1. Place chopped onions and serranos in the molcajete or mortar and pestle bowl. Add the lime juice and salt. 

  2. Use the pestle to grind the mixture, not to paste. You only want to release flavors from the onion and serrano; set aside for 5 minutes.

Finish the Guacamole

  1. Add the avocados and mash them to desired consistency.

  2. Taste the guacamole and season with additional salt or lime juice if desired. 

  3. Stir in cilantro and refrigerate for at least 30 minutes. Serve and enjoy! 

*Notes

Press plastic wrap directly on the guacamole to keep the air from turning the guacamole brown. Store in the refrigerator for up to two days.
