5 Ingredient Healthy Bean Soup 

Ingredients:

  • 1 Tbsp. Olive Oil

  • 1/4 C. Yellow Onion, diced 

  • 2 Garlic Cloves, minced 

  • 2 C. Shredded Cooked Chicken (you can use what you have available; I used leftover roasted chicken)

  • 4-6 C. Chicken Stock

  • 15 Oz. - Can of White Beans, rinsed under cold water 

  • Salt, to taste

Instructions:

1. In a medium saucepan over low medium, add oil followed by onion and garlic, and cook until translucent.
2. Next, add the chicken and cook for an additional minute. 
3. Follow with the chicken stock, bring to a simmer, and then add the beans.
4. Cook for 5-10 minutes until the beans are warmed through.
5. Add salt to taste and serve warm.

You can top the soup with your favorite toppings. I like minced serranos, onion, cilantro, and a squeeze of lime. Alternatively, you can add shredded cheese, a dollop of sour cream, and hot sauce. Enjoy!
