Ingredients

  • 1 Lb. Spaghetti

  • Zest of 1 Lemon

  • 1/3 Cup Fresh Cilantro

  • 1/3 Cup Parmesan Cheese + More For Serving, grated

  • 3 Garlic Cloves, minced

  • 4 Tbsp. Unsalted Butter

  • 2 Tbsp. Extra Virgin Olive Oil

  • 1 Tbsp. Crushed Dried Red Chili Flakes

  • Sea Salt, to taste

For the Scallops

  • 1 Lb. Sea Scallops

  • 2 Tbsp. Unsalted Butter

  • 2 Tbsp. Extra Virgin Olive Oil

  • Sea Salt and Fresh Ground Black Pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions about 12 minutes, until al dente.

  2. Season scallops with salt and black pepper.

  3. In a large skillet over medium heat melt the butter and olive oil.

  4. Add the scallops and cook 2 minutes per side and set aside.

  5. To the same skillet add the butter, olive oil, garlic, and red chili flakes cook for 2 minutes over medium heat.

  6. Add the drained cooked pasta and combine with the butter mixture.

  7. Turn off the heat, lastly add the lemon zest, cilantro and parmesan cheese. Taste and add salt to taste.

  8. Top the pasta with more parmesan cheese, followed by the scallops. Serve immediately and enjoy!
