Dairy & Gluten-Free Fudgy Brownie

Ingredients: 

Makes 1 8-inch square

Preparation Time: 45-50 minutes 

  • ½ C. Super Fine Almond Flour

  • 2 C. Coconut Sugar

  • 2 Organic Eggs

  • ¾ C. Unsweetened Cocoa Powder

  • 1 ½ Tsp. Vanilla Extract

  • ½ C. Coconut Oil

  • ¼ Tsp. Baking Powder

  • ½ C. Dairy Free Semi-Sweet Chocolate Chunks (I used Enjoy Life)

  • Pinch of Salt

  • Halloween Sprinkles (Optional)

Directions: 

  1. Preheat oven to 350 degrees.

  2. With coconut oil lightly grease an 8inch square baking. You can skip the oil if you use parchment paper to line the dish.

  3. In a double boiler over low-medium heat, combine and melt coconut oil, cocoa powder, and coconut sugar, for about 5 minutes it will still be grainy. Set aside for 15 minutes or until it comes to room temperature.

  4. Mix almond flour, baking powder, eggs, salt, and vanilla extract in a bowl; add cooled chocolate mixture and combine only until it comes together. Lastly fold in the chocolate chunks. Spread into an 8-inch square baking dish, top with sprinkles (optional).

  5. Bake for about 18-20 minutes until the top is set. Don't over bake, brownies will become dry.

  6. Remove from the oven and let sit for at least 10 minutes, remove from baking dish and cut into desired squares. Enjoy!

Tip:

Don’t have a double boiler? You can easily place a non-plastic bowl set over a pot of steaming water.
