 Chipotle Bbq Pulled Pork Sliders with Cilantro Slaw

INGREDIENTS

Makes 17-20 Mini Burgers

  • 3 Lb Boneless Pork Butt (trim extra fat)

  • Sea Salt & Fresh Ground Black Pepper

  • 17-20 Cocktail-Size Hamburger Buns or Small Round Dinner Rolls

Bbq Sauce

  • 1 Cup Ketchup

  • 2 Tbsp Worcestershire Sauce

  • 1/2 Cup Light Brown Sugar

  • 1/3 Cup Apple Cider Vinegar

  • 1/4 Cup Avocado Oil

  • 4 Garlic Cloves (minced)

  • 1 Tbsp Adobe Sauce

  • 3 Chipotle Peppers

  • 1 Medium Brown Onion (diced)

  • 1 Tsp Ground Cumin

  • Sea Salt (to taste)

  • 1 Tsp Fresh Ground Black Pepper

Cilantro Slaw

  • 1 Small Green Cabbage (thinly shredded)

  • 2 Cup Carrot (shredded)

  • 1/3 Cup Sour Cream

  • 1/3 Cup Mayo

  • 1 Lime (juiced)

  • 1 Garlic Clove (minced)

  • 1 1/2 Tbsp Sugar

  • 1/2 Cup Cilantro (chopped)

  • Sea Salt (to taste)

  • Fresh Ground Black Pepper (to taste)

INSTRUCTIONS

BBQ Sauce

  1. In a medium skillet over low-medium heat add the 1 tablespoon of avocado oil. Once the oil is warm add the diced onion with a couple pinches of salt and cook slowly for 10 minutes, follow with garlic and cook until fragrant (about 1 minute).

  2. Add all bbq ingredients to your blender, including the sauteéd onions. Blend until smooth, taste and add salt and pepper to taste.

  3. In a medium, sauce-pan, cook the bbq sauce 10 minutes over medium heat to develop flavors. Let sit at room temperature to cool down.

  4. Place the pork shoulder in a slow cooker and season with salt and pepper. Top with bbq sauce and set slow cooker to low. Cover and cook for 7 hours.

  5. After 7 hours gently remove the pork from the slow cooker. Skim any fat from the top of the bbq sauce. Shred pork with 2 forks and return the pork to bbq sauce. Raise the slow cooker to high and let cook for 30 minutes.

Cilantro Coleslaw

  1. Combine all the ingredients except the cabbage, carrot, and cilantro. Taste and add salt and pepper to taste. Add sauce to the cabbage, carrot and cilantro combine, taste and season if necessary. Refrigerate until ready to serve.

SERVING

  1. Toast buns in a skillet, top with pulled pork followed by cilantro slaw. Enjoy!
