Spicy Jackfruit "Meat"

Spicy Jackfruit "Meat"

Serves 4-6

  • 2- 20 Oz. Cans Jackfruit In Water

  • Juice of 1/2 an Orange

  • Juice of 1 Lime

  • 1-3 Tsp. Adobe Sauce from Chipotles + 1 Chipotle Pepper ( you can use more or less depending on how spicy you want it)

  • 4 Garlic Cloves, minced

  • 1 C. White Onion, finally chopped

  • 1 1/2 Tsp. Dried Oregano

  • 1 Tsp. Cumin

  • 1 1/2 Tbsp. Brown Sugar

  • 1 Tbsp. Avocado Oil

  1. Start by thoroughly rinsing and draining the jackfruit. After it has been rinsed begin by shredding the jackfruit and chopping any tough pieces into a smaller size. Rinse one more time in a colander, drain, and thoroughly dry.

  2. Heat a large skillet over low-medium heat, add the avocado oil, onion, and garlic. Sauté for 5-6 minutes or until onions are translucent and soft.

  3. Add jackfruit, salt, chipotle pepers, adobe sauce, oregano, cumin, lime and orange juice and brown sugar. Stir to coat and reduce heat to low, and cook for about 20-25 minutes until most of the liquid has evaporated, stirring occasionally.

  4. After 25 minutes, taste and adjust flavor as needed, adding more chipotle pepper or adobo sauce, lime or salt to taste.

  5. Turn the heat to high and cook for 6-8 minutes to get a bit more color. Then remove from heat.

  6. My favorite ways to enjoy this jackfruit recipe is by making tacos, bowls, burritos, quesadillas, or great in a breakfast scramble or omelette. Enjoy!
