Smoky-Spicy Chicken Thighs

Servings 4-6


  • 3 1/2 Lb. Bone-In, Skin-On Chicken Thighs

  • 1 Large Tomato

  • 4 Tbsp Organic Sour Cream

  • 3 Garlic Cloves, peeled

  • 3 Tbsp. Brown Sugar

  • 1-2 Chipotle Peppers In Adobe Sauce, plus 2 tablespoons of adobe sauce from the can.

  • Sea Salt And Fresh Black Pepper


  1. In a medium sauce pan bring water to a boil, add the tomato and cook for 20 minutes. Remove from water and set aside to cool.

  2. Blend the tomatoes, chipotle peppers, adobe sauce, sugar and garlic, until smooth. Once smooth add the sour cream and blend until combined, taste the sauce and season with salt and black pepper to taste.

  3. Combined the chicken thighs with the tomato blend, marinate for minimum of 6 hours, preferably overnight.

  4. Preheat oven to 375 degrees. Place all chicken thighs in a lined baking sheet skin side up and bake for 40-50 minutes or until internal temperature reaches 165 degrees.

  5. Remove from baking sheet, allow it to rest for 5 minutes before serving and enjoy!


  • This recipe is also great grilled the sauce creates a delicious crust on the chicken!
