Shrimp Ceviche Made Easy
1 Lb Raw Shrimp (peeled and deveined)
1 Large Tomato (diced)
1 Small Red Onion (finelly chopped)
1-2 Jalapenos or Serranos Peppper (diced)
1/2 Cup Fresh Cilantro (finelly chopped)
3/4 Cup Fresh Lime Juice
Sea Salt (to taste)
Tostadas (for serving )
Hot Sauce (optional)
Start by cutting the shrimp into 1/2 inch pieces. Combine the shrimp in a large bowl with 1/2 of cup of the lime juice. Let the shrimp "cook" in the lime juice for 25-30 minutes in the refrigerator.
Once the shrimp has cooked, add the tomato, onion, jalapenos/serrano peppers, cilantro and the rest of the lime juice (1/4 cup) to the shrimp. Season with salt to taste.
To serve the shrimp top tostadas with shrimp ceviche. If you want the extra kick I recommend adding a couple dashes of bottle hot sauce. Enjoy!
